Natural sugar derived amphiphiles were synthesized by the transesterification of oligo- and polysaccharides with fatty acid vinyl esters using molecular sieves or enzymes as a green catalyst. Amylose was acylated by fatty acid vinyl ester using molecular sieves 4A. Also, glucose, maltose and maltotriose were acylated by fatty acid vinyl ester using immobilized lipase from Candida antarctica (Novozym 435). And their surface properties and biodegradabilities were evaluated with respect to the carbohydrate chain length and acyl chain length.
